Sausages!
Our sausage making days are great fun! Using only locally farmed high welfare meat or vegetarian ingredients we know exactly what goes into our sausages. Here are a couple of recipes one vegetarian and one pork based.
Vegetarian Sausage
25g mushrooms, finely chopped
1 can lentils in water
1 tablespoon chopped onions
1 clove garlic (crushed or finely chopped)
1 teaspoon thyme
1 teaspoon oregano
Salt
Pepper
1 tablespoon tomato puree
100g crushed walnuts
100g breadcrumbs
1 onion
Rapeseed oil
Fry off the onions and garlic
Drain and crush the lentils
Combine all the ingredients and then push into a vegetarian sausage casing. Rub with a little oil before cooking
Here is a standard sausage mix that you can vary with any herbs and spices that you like. Make them as hot & spicy as you like!
Italian sausage mix
1 lb pork mince
1 teaspoon fennel seeds
1 teaspoon black pepper
2 teaspoons paprika
1 teaspoon sugar
1 teaspoon salt
1 teaspoon red wine vinegar
We use hog casings for the pork sausages but there are plenty of kits and casings available so have a go yourself. Keep an eye on our web site for news of upcoming sustainability courses.
